Waistline Friendly Zucchini Fries

It’s officially football season, which is also grilling season. Who doesn’t like fries to go along with their grass-fed beef burgers? Here is a great alternative to the standard fries. With less calories and more nutrients your skinny jeans will thank you for making this switch.

  • Zucchini is very low in calories
  • Almond meal adds protein while keeping the carbs low
  • Coconut flour gives it a little pinch of sweetness
  • Baked not fried (of course)

Zucchini Fries

3-4 Large ZucchiniZucchini Fries

1/2 C Almond Meal/Flour

3 tbl Coconut Flour

1/2C Shredded or Grated Parmesan Cheese

1/4 tsp Sea Salt

Pepper to taste

1 tsp Oregano (optional)

1 Egg 1/4 C Almond Milk

 

Honey Mustard Dipping Sauce

1/2C Dijon Mustard

2 tbl Apple Cider Vinegar

4 tbl Honey (raw and local if available)

Preheat oven to 375. Whisk egg in bowl and add milk. In a separate bowl mix almond meal/flour, coconut flour, cheese, salt, pepper, and oregano (optional). Cut zucchini into 3″ long strips and about 1/2″ thick. Dip zucchini sticks into the egg/milk mixture and let the excess liquid drain back into the bowl. Then dip it into the dry mixture, coating the entire stick. Place on a cookie sheet greased with coconut oil (or a non-stick cookie sheet) 1/4″ apart. Bake at 375 degrees for 25-30 minutes. Serve with honey mustard dipping sauce or plain marinara sauce. Enjoy!

    ANOTHER POSSIBILITY SURE TO PLEASE IS SWEET POTATO FRIES. RECIPES FOR THEM ABOUND ON THE INTERNET. JUST BE SURE TO BAKE THEM ON A SILICONE SURFACE, OR USE COCONUT OIL, SAFFLOWER OR OLIVE OIL TO GENTLY CRISP ON THE STOVETOP.
